Nugali Chocolates was founded in 2004, and was the first small-sized company in Brazil to produce chocolates from bean to bar.Until then, cocoa growers in Brazil had to sell their production either to large chocolate companies or, more commonly, to large cocoa liquor producers with commodity prices.
This direct contact between artisan chocolate makers and cocoa growers, pioneered in Brazil by Nugali and cocoa grower João Tavares, created room for new discussions about cocoa varieties, fermenting, roasting that were not relevant in commodity-cocoa.
In 2010 and 2011 this cocoa, used in many Nugali products, was awarded in Salon du Chocolat (Paris) as best flavor cocoa, crowning this four-handed work. Among the products using this cocoa are Serra do Conduru 80% (this was the first single-origin chocolate made in Brazil) and CacauemFlor product line.
Nugali chocolates are produced only with all natural ingredients, awarded Brazilian cocoa beans, pure cocoa butter and natural vanilla extract, free from substitute ingredients and gluten free. Nugali offers a complete line of chocolate confectionery products, bringing many Brazilian flavors in innovative design packages, ready to attend high-end retail market.
The cocoa is grown in Bahia in an agro forestry system, in the shade of native trees, preserving “Mata Atlantica” forest areas. Flavor-rich cocoa varieties, mainly Trinitarios and Scavinas. All cocoa used by Nugali is fermented for up to seven days, and only sun-dried.
