Few names have had as much influence on Canada’s premium chocolate landscape as Bernard Callebaut. Born into a Belgian chocolate-making family, Callebaut brought generations of European knowledge to Calgary and built a career that helped introduce many Canadians to fine, handcrafted chocolate.

Over more than four decades, his work has combined traditional European techniques with an entrepreneurial spirit and a willingness to evolve. Today, Callebaut continues creating chocolate in Calgary through Master Chocolat, where his name and craftsmanship remain at the centre of the business.

Bringing Belgian Chocolate Traditions to Canada

Chocolate was part of Callebaut’s life long before he established himself in Canada. His family background connected him to Belgium’s long chocolate-making tradition, giving him an early foundation in the techniques and standards associated with European confectionery.

After settling in Calgary, Callebaut developed his own chocolate-making operation. What began as a small enterprise grew over the years into a widely recognized name, helping raise expectations for premium chocolate in Western Canada and beyond. Historical Canadian government records show Chocolaterie Bernard Callebaut operating in Calgary as early as the 1980s.

Building a Canadian Chocolate Legacy

Callebaut’s approach has long emphasized quality ingredients, careful technique and flavour. Classic pralines and truffles helped establish his reputation, while an expanding range of chocolate creations introduced customers to a more artisanal approach to confectionery.

His influence extends beyond individual products. As Canada’s artisan chocolate scene developed, Callebaut became one of the country’s most recognizable chocolate figures, demonstrating that European chocolate-making traditions could establish deep roots in a distinctly Canadian market.

Today, the chocolatier continues that work through Master Chocolat. The Calgary company describes his journey as growing from a one-person chocolate operation into a brand recognized well beyond Alberta.

A New Chapter with Master Chocolat

Rather than treating his accomplishments as a finished chapter, Callebaut has continued creating.

Master Chocolat, founded in Calgary in 2015, produces artisan chocolate bars, truffles, boxed chocolates, seasonal treats and other confections bearing Callebaut’s creative influence.

The company also gives chocolate enthusiasts an opportunity to learn directly from him. Hands-on chocolate-making courses led by Callebaut combine chocolate history and tasting with practical instruction. Participants create bars, truffles and other confections while learning professional techniques.

Inspiring Canada’s Chocolate Community

Callebaut’s enduring contribution is not simply the chocolate he has produced. His career has helped demonstrate the possibilities for artisan chocolate making in Canada, while his continued teaching provides another way to pass that knowledge forward.
