The story of Cluizel began in 1948 in Damville, Normandy, inside the family kitchen of pastry chefs Marc and Marcelle Cluizel.
What began with chocolate confections developed into one of France’s distinctive family-run chocolate houses. Today, the third and fourth generations of the Cluizel family continue the business in Normandy, maintaining a rare combination of skills that stretches from cacao bean to finished bonbon.
Unlike a chocolatier working primarily with prepared couverture, Manufacture Cluizel roasts cacao beans and transforms them into its own chocolate. It also creates fillings, pralines and confections before shaping and decorating finished chocolates. That breadth of expertise has become central to the Cluizel identity.
Cluizel describes its work through three complementary métiers: Cacaofèvier®, Confiseur and Chocolatier.
As a Cacaofèvier, the company selects cacao, works with growers, roasts beans and transforms them into cacao paste and finished chocolate. As a confectioner, it develops fillings including pralines, caramel, marzipan, nougatine and gianduja. Finally, its chocolatiers transform those components into finished creations.
Cluizel created the designation Cacaofèvier® in 2006 to describe this combination of cacao sourcing and chocolate production. It is a useful distinction because Cluizel sits between two worlds: the modern bean-to-bar movement and the much older French tradition of the chocolatier-confiseur.
Cluizel began working directly with cacao growers in the late 1990s, building partnerships that eventually became one of the company’s signatures. In 1999, it introduced a dark chocolate made with cacao from a single plantation, Hacienda Concepción in Venezuela. The idea evolved into today’s Plantation Chocolates collection.
Rather than identifying cacao only by country, these chocolates focus on beans from individual plantations.
Cluizel compares the idea to estate wine: soil, climate, cacao variety, fermentation and processing can contribute to a chocolate’s individual aromatic character. Its current Plantation collection explores cacao from several distinctive growing locations around the world.
This makes terroir more than marketing language. It becomes something readers can actually compare from one chocolate to another.
In 2000, Cluizel introduced its Noble Ingredients commitment as a standard for the ingredients used in its chocolate. For its chocolate recipes, the standard specifies pure cacao butter, Bourbon vanilla and sugar, while excluding added flavouring and soya.
The approach reflects a broader philosophy within the company: allow cacao and carefully selected ingredients to provide the flavour rather than relying heavily on additives.
Cluizel also reports that the cacao it uses is 100 per cent traceable, complementing its long-running relationships with individual growers and plantations.
Cluizel’s history includes several notable milestones.
It opened its first Paris boutique on rue Saint-Honoré in 1987. Two years later, the company introduced what it identifies as the first 99 per cent cacao chocolate bar on the market. In 2012, Manufacture Cluizel received France’s Entreprise du Patrimoine Vivant, or Living Heritage Company, designation recognising exceptional French artisanal and industrial expertise.
Yet perhaps its most important continuity is family ownership.
The company remains rooted in Normandy, where successive generations have expanded the original family enterprise without abandoning chocolate production itself.
More than 75 years after Marc and Marcelle Cluizel began making chocolates in their kitchen, cacao sourcing, roasting, chocolate making and confectionery remain connected under the same family name.
