At John Kelly Chocolates, an old-fashioned American confection became the starting point for something considerably more refined.
Founded in Hollywood in 2004, the company transformed a family fudge recipe into its signature truffle fudge — a silky chocolate confection combining the richness of fudge with a texture reminiscent of ganache. More than two decades later, that creation remains at the heart of an artisan chocolate company built around handcrafted production, distinctive flavours and contemporary presentation.
Despite the name, there isn’t a chocolatier named John Kelly behind the company. The founders are John and Kelly, two creative professionals who came to chocolate from very different backgrounds.
John had worked with luxury retailers and designers in Beverly Hills and New York, developing an eye for product quality and presentation. Kelly came from branding and advertising, where he managed international campaigns while pursuing creative interests that included cooking.
Together, they saw an opportunity to create an American chocolate company combining flavour, craftsmanship and sophisticated presentation.
The idea that ultimately defined John Kelly Chocolates came from Kelly’s childhood.
His mother made a traditional fudge that he remembered years later when the pair began considering what kind of chocolate they wanted to produce. They started experimenting with the recipe, improving ingredients and adjusting cooking methods and flavours.
The result became truffle fudge.
Rather than being a traditional chocolate truffle, the confection has a smooth fudge centre with a consistency similar to ganache, surrounded by a chocolate coating. That distinction became the company’s signature.
John and Kelly left their previous careers and opened a small chocolate factory near Sunset Boulevard in Hollywood in 2004. What began with one reinterpretation of a family recipe gradually developed into a much broader collection.
Today, truffle fudge appears in numerous variations. The collection moves well beyond traditional chocolate fudge, incorporating ingredients such as French grey sea salt, Hawaiian Alaea sea salt, espresso, raspberry, orange, chile, peanut butter and caramel.
The company also produces walnut caramel clusters, salted caramels, moulded chocolates and chocolate-dipped fruits and other confections.
This places John Kelly firmly in the chocolatier and confectioner tradition rather than modern bean-to-bar chocolate making. The company’s craft lies in what it creates with chocolate — particularly its ability to take a familiar American confection and reinterpret it as a fine-chocolate experience.
Despite developing from a small local operation into a nationally distributed brand, John Kelly continues to produce its chocolates in Hollywood, California. Its Los Angeles boutique sits near Sunset Boulevard and La Brea, close to where the company began. A second boutique operates on Montana Avenue in Santa Monica.
That Hollywood connection has become part of the company’s identity. Rather than adopting a European chocolate-house persona, John Kelly presents a distinctly contemporary California interpretation of artisan confectionery.
Presentation also plays a significant role. The founders’ backgrounds in luxury retail, design, branding and advertising can be seen in packaging designed to position the chocolates as carefully considered objects as well as confections.
John Kelly Chocolates occupies an interesting place within contemporary American chocolate.
It isn’t trying to recreate a centuries-old European chocolate house, nor does it make chocolate from cacao beans like the craft makers driving the bean-to-bar movement. Instead, its identity began with something thoroughly familiar: homemade American fudge.
By refining that family recipe, pairing it with chocolate and building an entire collection around it, John Kelly created a speciality that is recognisably connected to traditional fudge while having an identity of its own.
More than 20 years after that first Hollywood factory opened, truffle fudge remains the product that defines John Kelly Chocolates — and a good example of how an old American confection can be reinvented for a new generation.
