Where Cacao Meets the Mountains

Surrounded by Utah’s mountain landscape, Ritual Chocolate has developed an approach to bean-to-bar chocolate that connects cacao origin with a strong sense of place.

Founded in 2010, Ritual produces small-batch chocolate from ethically sourced cacao, with an emphasis on preserving the distinctive flavours of individual origins. What began as an experiment in a tiny Colorado test kitchen has grown into a working chocolate factory, café and tasting destination in Heber City, just outside Park City.

A Small Beginning

Ritual began with Anna Seear and Robert Stout, who started experimenting with chocolate in a roughly 400-square-foot studio in Colorado.

A visit to a cacao farm in Costa Rica helped deepen Seear’s interest in the connection between agriculture and finished chocolate. The young company initially focused on a particularly simple formula: cacao, sugar and single-origin production.

The business eventually moved from Colorado to Utah, first operating in Park City before establishing its current factory in Heber City.

Stout stepped away from Ritual in 2023, while Seear continues to lead the company.

Preserving the Character of Cacao

Ritual’s bean-to-bar process begins with carefully sourced cacao.

The company works with growers and co-operatives that emphasise sustainable agriculture, biodiversity and quality. Current cacao origins include Belize, Peru, Ecuador and Madagascar, each selected for distinctive flavour characteristics.

Ritual has worked with Maya Mountain Cacao in Belize since 2013, for example, sourcing cacao produced by a network that includes hundreds of certified organic family farms.

Rather than trying to make every origin taste alike, Ritual uses chocolate-making techniques intended to preserve the individual characteristics of the cacao.

Old-World Equipment, Modern American Craft

Ritual’s production process combines modern craft chocolate with some decidedly old machinery.

After a light roast, cacao is cracked and winnowed. The nibs are pre-ground before being combined with organic cane sugar in granite stone melangeurs.

The chocolate then passes through a vintage three-roll refiner before entering a 1915 longitudinal conche, where each batch is refined for 72 hours. Finally, the chocolate is tempered, moulded and packaged. That lengthy process is designed to develop texture and flavour while allowing the characteristics of the original cacao to remain noticeable.

Chocolate Inspired by Utah

Although single-origin chocolate remains important to Ritual, the company’s surroundings have increasingly influenced what it makes.

Over the years, Ritual expanded beyond its original cacao-and-sugar philosophy and began experimenting with ingredients connected to its mountain home. Its Mountain Line has incorporated flavours such as juniper, lavender, local honey, cherries, salt and toasted grains.

That evolution gives Ritual an interesting position within American craft chocolate. The cacao may originate thousands of kilometres away, but some of the finished bars also reflect the landscape and food culture surrounding the Utah factory.

Sixteen Years of Craft Chocolate

In September 2026, Ritual marked 16 years in business.

During that time, it has grown from experimental batches produced on small equipment to a dedicated factory, café and coffee shop in Heber City. Yet the company’s central focus remains remarkably similar: quality cacao, careful production and greater awareness of where chocolate comes from.

For chocolate lovers, Ritual demonstrates how bean-to-bar chocolate can express two places simultaneously — the tropical region where the cacao was grown and the community where a chocolate maker transforms it.

Its Utah setting has become part of that story, giving Ritual a distinctly American identity within the wider craft chocolate movement.
