Kansas City may not be the first American city that comes to mind when discussing fine chocolate, but Christopher Elbow has helped change that perception. Since launching Christopher Elbow Chocolates in 2003, the Kansas City native has developed a distinctive approach built around handcrafted bonbons, carefully balanced flavours and striking presentation.

His chocolates are immediately recognisable. Polished shells, vivid colours and precise finishes give the collections a contemporary visual identity, while the flavours inside reflect a culinary approach to confectionery. From infused ganaches and caramels to interpretations of familiar desserts, Elbow’s work brings together craftsmanship and modern culinary creativity.

From the Kitchen to Chocolate

Elbow’s chocolate business began modestly in Kansas City in 2003. Early production took place in a small space above a local restaurant before the operation developed into a recognised chocolate company.

Rather than treating chocolate simply as a sweet, Elbow approached it with the sensibility of a chef. Ingredients, flavour balance, texture and presentation became equally important parts of the experience.

That philosophy remains evident in the company’s signature collections. Christopher Elbow Chocolates describes its approach as combining quality ingredients from around the world with modern culinary artistry and a craftsman’s work ethic.

Building a Signature Style

Bonbons are at the centre of Elbow’s work. Their colourful exteriors may attract attention first, but the fillings demonstrate the range of his flavour vocabulary.

Current collections include combinations such as Fleur de Sel Caramel, Fresh Lemon, Champagne and Macadamia Praline. Other creations move further into culinary territory. A dark chocolate bar, for example, combines ancho and chipotle chillies with cinnamon, while limited collections reinterpret familiar desserts as chocolates.

The result is chocolate that feels polished without becoming inaccessible. Recognisable ingredients often provide the starting point, while technique and presentation transform them into something more refined.

Growing Beyond Kansas City

What began as a Kansas City operation has developed well beyond its Missouri roots.

The company continues to operate its Kansas City shop and has expanded its retail presence to San Francisco, California; Breckenridge, Colorado; and Yountville, California. Its chocolates are also available through selected retailers.

Yet Kansas City remains central to the brand’s identity. Elbow’s growth demonstrates how an independent chocolatier can build national recognition without abandoning the city where the business began.

More Than Beautiful Bonbons

Presentation is an important part of Christopher Elbow Chocolates, but craftsmanship remains at the centre of the operation. Signature chocolates are produced without artificial preservatives, and the company recommends enjoying them within two to four weeks for optimum flavour and texture.

Its range has also grown beyond bonbons. Chocolate bars, caramels, toffee, drinking chocolate and seasonal collections allow Elbow to explore different textures and formats while maintaining the company’s distinctive approach.

More than two decades after the business began, Christopher Elbow continues to demonstrate that American artisan chocolate can be simultaneously sophisticated, playful and firmly connected to place.
